Kodiak Cakes Blueberry Protein Muffins
2oo grams kodiak cakes buttermilk pancake mix
1 egg, beaten
1 cup unsweetened almond milk
1/2 cup unsweetened apple sauce
.75 cup frozen blueberries
4 tbsp truvia or other stevia based sweetener
1 tsp vanilla extract
1 tsp baking powder
1/2 cup instant oats
Preheat oven to 350. Place 12 parchment paper muffin liners in a muffin pan.
In a medium bowl mix all wet ingredients together (except the blueberries) with a hand mixer or fork.
In a larger bowl mix all dry ingredients together.
Combine wet and dry ingredients together and fold in blueberries.
Seperate into 12 muffins.
Bake at 350 for about 18-20 minutes.
Check them after 18 minutes with a toothpick - Do not overcook!!!
Approximately 97 calories, 1.5 grams fat, 18.6 grams carbs, 3 grams sugar, 2.3 grams fiber, 5.6 grams protein per muffin.
