Pumpkin Bread Protein Muffins

150 grams kodiak cakes buttermilk pancake mix
1 large egg
1 cup unsweetened canned pumpkin
70 grams Magnum quattro soft serve vanilla protein powder
1/4 cup unsweetened vanilla almond milk
2 tbsp truvia or other stevia based sweetener
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp of pumpkin pie spice

Preheat oven to 350. Place 12 parchment paper muffin liners in a muffin pan. In a large bowl mix all wet ingredients together with a fork, add dry ingredients and mix. Transfer batter into your muffin pan. Bake at 350 for about 20 minutes. Check them after 20 minutes with a toothpick! Do not overcook!

Approximately 80 calories, 1.2 grams fat, 11.9 grams carbs, 1.4 grams sugar, 2.2 grams fiber, 9.5 grams protein per muffin. Top with my cream cheese icing found on the dessert page!
